Creamy Shrimp

imageThis is seriously the best Shrimp ever! After testing out so many shrimp recipes I was able to come up with this very own unique recipe! My family is totally obsessed with this recipe, so I make this very often. it can be served super fast by cooking on a stove top or can be grilled on kebab sticks which tastes even better! It’s super easy and fast to make! Try this recipe and let it also become your families favorite!

Serves 2 as a meal,  or 6-7 as an appetizer

Ingredients:

  • 2 lb shrimp uncooked ( i prefer to use devined with tail on, the large size shrimp)
  • 1 tablespoon butter- sauce
  • 1/4 of 8 ounce cream cheese-sauce
  • 1/4 cup heavy cream-sauce
  • minced garlic-sauce
  • Garlic powder-sauce
  • 2 Tbsp flour ( only if cooking shrimp on stove top)
  • salt and pepper
  • 1/2 tbsp of any oil
  • paprika, green garnish and red pepper flakes optional

Directions: 

  1. Thaw shrimp, rinse and pat dry
  2. Lightly season with salt, pepper, paprika and red pepper flakes optional ( optional) or any of your favorite seasonings!
  3. To make the sauce, heat a pan with the 1 Tbsp of butter
  4. Once butter is melted add the cream cheese and press on it until completely melted and no more chunks.
  5. Add heavy cream  and let it lightly boil
  6. Once boiling season with salt, pepper, garlic powder, minced garlic, Paprika( optional- gives the shrimp some color!), red pepper flakes( if you like spicy shrimp). Add a little of each and give the sauce a taste. It should not be over seasoned, but perfect to taste!
  7. Let sauce cool down a bit until slightly warm or room temperature. (  will cool down faster if you put the pan on cold water and give the sauce a mix a couple times!
  8. Once sauce is cooled, in a large bowl place your shrimp and mix with all the sauce very well!
  9. Add 2 Tbsp of flour to the bowl and mix very well!!( Note: if grilling shrimp DO NOT ADD FLOUR, it will make the shrimp super dry and burned! )
  10. Let Marinate for at least 1-2 hours. Could marinate as long as 24 hours
  11. Once marinated- heat up a large skillet with light oil just to coat the pan so the shrimp doesn’t stick to it ! On small-medium heat.
  12. Cook 1-2 minutes per side until shrimp turns pink
  13. turn each shrimp around to the other side and cook for 1-2 more minutes! DO NOT OVERCOOK OR SHRIMP WILL BE RUBBERY!!
  14. Toss in some chopped greens to garnish the shrimp ( like green union, parsley, basil and ect..)
  15. If wanting to grill the shrimp, then put about 4-5 shrimp on a kebab stick or depends how big your shrimp are. But make sure they are not tight!
  16. lightly spray oil on the grill and on low-medium heat grill one side 2 minutes turn around and grill the second side 2 minutes. Then do another round of turning around so that shrimps have cooked for about 8-10 minutes!
  17. If you need to make this ahead, then go ahead and do all these steps. Once shrimp has cooled down, leave in room temperature. Right before serving pre heat oven to 375 and warm up shrimp for no longer then 10 min until shrimp is hot!

Chicken and Bacon FlatBread

Chicken, bacon flatbread with Alfredo sauce

Do you want to know how to make this Super easy, 10 min delicious Flat bread?? Then keep scrolling down. If you have flatbreads at home, or know how to make these then you can make so many different pizza toppings! Its perfect for a quick snack, lunch, party or for un expected guests that show up at your house. I buy these flatbreads at Cosco, but i also have seen similar ones in almost any other grocery store! I keep them in my freezer and i just take out as many as i want when needed. I let them thaw or if i need them quickly i put in microwave for 20 seconds. And let me tell you, if you have these flatbreads in your freezer, then you can make so many different recipes that will look like you spent hours but really you only spent 10-15 min! 1 Flatbread serves 1-2 people or 5-6 as a party appetizer

Ingredients:

  • Ready to use flatbreads( Cosco, walmart, fredmeyer, winco and ect..)
  • Grilled chicken( i use grilled chicken strips from Cosco but any other cooked chicken in your fridge also works!)
  • Parmesan cheese, Mozzarella, or any other italian cheese
  • Bacon crumbs or cooked up bacon and sliced
  • thinly sliced sweet Onion( also could add diced green shallots)
  • Minced garlic
  • Olive oil
  • thinly diced tomatoes( optional)
  • Any green seasoning fresh or dry to sprinkle over the pizza

I like to spread some alfredo sauce on my flatbread, to make it a alfredo chicken pizza.  If you like alfredo then i highly recommend to try adding it. It gives the flatbread so much more taste, flavor and juiciness.

Alfredo Sauce Ingredients: for 1 flat bread

  • Cream cheese 1/6 of the 8 ounce pack
  • Heavy Cream 1/4 cup
  • Parmesan cheese( Or Italian if thats what you have on hand)
  • garlic powder
  • salt/pepper

Instructions:   As you probably have noticed, the ingredients don’t have any measurements because this is based on personal preferences. Everybody has tasted and knows how pizzas look like so its more based on how much of each ingredient you want on your flatbread!

  1. Pre-heat oven to 400
  2. dice up your cooked chicken 
  3. Slice up unions, mince garlic and dice tomatoes( optional)
  4. Cook you bacon and thinly slice and dice or use packaged bacon crumbs 
  5. Make Alfredo sauce if using it on your flatbread and spread thinly on your flatbread
  6. If not using Alfredo then thinly spread olive oil on your flatbread 
  7. Evenly spread sliced up unions, and minced garlic
  8. Top evenly with the cooked chicken, bacon and tomatoes( if using)
  9. Sprinkle Shallots( if using) and Sprinkle with cheese evenly over pizza 
  10. and if any alfredo sauce left over then gently spread over the cheese and could sprinkle a little more cheese over again
  11. Sprinkle with any herbs, green seasoning or thinly chopped fresh herbs( parsley, basil, oregano..ect)
  12. Place the flatbread on a baking pan and bake at 400 for 10 minutes or when cheese has melted completely. Make sure not to over bake
  13. Once done baking and cooled down 2-3 min. Using a pizza cutter, cut into small triangle shapes. 

NOTE: Do not put too much of each ingredients on flatbread or it will not bake throughly. The toppings will not be nicely melted together and if you will try to bake it longer then the flatbread itself will get too hard. And once you pick up a slice all the toppings could fall apart since they won’t be nicely melted together. So if you want the flatbread to turn out perfect then just think of the pizza slices you have ate before and how much they are topped!

ENJOY this super easy and fast recipe. And remember there are so many other toppings you can also top it off with. Basically anything from your fridge to your pantry. Other ideas are.. Chow Mein at Home

Who doesn’t love Panda Express Chow mein?? My family is obsessed with this homemade Chow mein, you guys gotta try it! Super easy and fast to make. I personally could eat it alone, but it does go great with side dishes. Like orange chicken, brocoli and beef or shrimp! Be sure to try out this super easy, fast, and inexpensive recipe!

Serves 2 people

imageIngredients:

  • 1 6ounce pack Chow-mein stir fry noodles (Asian section)
  • 3 Tbsp oyster sauce
  • 1/2 Tbsp sesame oil
  • 3 Tbsp soy sauce
  • 12 ounces Cabbage grated or thinly sliced
  • 1/4 large Onion thinly sliced
  • 3 Celery sticks
  • 2 carrots diced – optional
  • 2 Tbsp olive oil
  • salt pepper -optional

Instructions:

  1. Bring a pot of water to a boil, add the noodles prepare and cook per package directions!
  2. slice up all the cabbage and union to thin pieces
  3. dice the celery and carrots(optional)
  4. Heat up a large skillet with 2 tablespoons of olive oil
  5. add unions and carrots, mix and sauté until slightly softened
  6. add cabbage, celery and mix until all softened and Carmelized
  7. add the noodles, mix well!
  8. add soy sauce, oyster sauce and sesame oil and mix well
  9. taste if salt and pepper needed or more sauce!
  10. cook for 2-3 min more mixing well

Easiest Shrimp ALfredo Recipe

Hello, today i will be sharing my Delicious Alfredo Pasta Recipe! This is one of the easiest Alfredo recipes you will ever make! Perfect for a family dinner or a paty! This recipe could be made ahead of time and just preheated in the oven right before serving, but even better could be frozen up to 2 months, then thawed and preheated right before serving!! You guys will love this recipe! Also this recipe could be made with chicken, broccoli instead of shrimp. My family loves Shrimp so i usually make everything with shrimp 🙂 Enjoy, comment and follow for more recipes!

Serves 4-5 people or 10-12 as a side dish!

Ingredients: 

  •  1 box 16 ounce Penne pasta ( could substitute with other pastas)
  • 1- 8 ounce bag of Shrimp (i use the divined with tail on, but could use divined, peeled and even cooked shrimp)
  • 2 tablespoon of butter

FOR THE ALFREDO SAUCE

  • 1.5 cups of heavy cream ( any kind works)
  • 4 ounce cream cheese
  • 2 tablespoon butter( salted or unsalted)
  • 1 cup of Parmesan cheese( could use fresh or grated in bag. I use the one on hand!)
  • 1-1/2 tspoon of minced garlic( also garlic powder works fine!)
  • salt, minced pepper and powdered garlic

INSTRUCTIONS:

  1. Thaw shrimp, if did not have the chance, just slightly boil so shrimp isn’t frozen!
  2. bring water to boil in a large pot and stir in in the pasta with 1/2-1 Tbsp of salt.(depends how much water in the pot.Water should be perfect to taste)
  3. While pasta is cooking, season the shrimp with salt, pepper, and garlic salt( shrimp should not be wet, but patted dry!)
  4. heat up 2 tablespoon of butter in a skillet and cook the shrimp until pink, on both sides 1-2 min . DO NOT OVER COOK THE SHRIMP
  5. Once pasta is ready( really soft) drain and rinse with warm water and let the water drain completely!
  6. For the Alfredo sauce- in a saucepan or small pot melt the 2 Tablespoons of butter and add the cream cheese. Using a whisk, whisk until cream cheese is fully melted.
  7. Add minced garlic, some garlic salt, minced pepper and heavy cream. Let it all come to a boil
  8. Once boiling add 1 cup of the Parmesan cheese! mix well until fully melted and boiling!
  9. Taste, does it need more salt,pepper or garlic?? now is the time to add if needed
  10. if sauce is too runny go ahead and add more cheese or if too thick add more heavy cream and wait till it boils again! If you dont want to add more cheese to thicken ( like me) just add 1 tablespoon of flour and just mix until smooth!
  11. Now to assemble everything, if you can’t wait to eat then the fastest way is to just toss in the shrimp, Alfredo sauce with the pasta and mix well! But if this dish is for a party what i do is assemble in a specific order. Use a nice baking dish or bowl,mix the pasta with 3/4 of the sauce. Spread 1/3 of the pasta into the dish then  spread 1/3 of the shrimp evenly on top, and sprinkle generously with cheese. DO the same for the 2nd and 3rd layer. Once everything is in the dish spread the rest of the 1/4 sauce evenly on top over the shrimp pasta and sprinkle with cheese. 
  12. At this point if this is ready to be served put it in the oven for 10-12 min uncovered at 375 or until cheese is melted on top!
  13. if you are prepping this for later on the day, then just cover and put away to the side and when ready to serve uncover and bake in the oven for 12-15 min. If you are making this the day before then once cooled down cover and refrigerate. And to warm up bake at 375 for about 30-35min! And if you are wanting to freeze it for another night( good in freezer up to 2 months) cover the dish tightly and then the night before serving let it thaw in fridge overnight and bake at 375 for 30-35 min or until fully melted and hot!

Loaded baked potato skins

Hello, my first recipe that I am posting  are Loaded Baked potato skins! Super easy, delicious, fast to make and the best part is that you can make these ahead of time and warmed up in the oven right before serving! These can be made for dinner using larger potatoes or for a party using smaller or mini potatoes!

3-4 servingsTwice-baked-potatoes-by-Jamielyn-Nye

ingredients:

  •  5 medium-large potatoes of any kind  ( I personally like yellow the most)
  • 4-5 slices of bacon( depends how much you like bacon!)
  • 3 Tbls salted or unsalted butter ( whichever one you have on hand or preffer)
  • 3-4 Tbsps of sour cream plus more for topping
  • 3 scallions sliced
  • 1 1/2 cups of shredded cheese. I use cheddar, Mexican and mozzarella. Use any on hand , don’t have to make a special trip to the store just for the cheese!)
  • 2 Tbsp olive oil ( any other oils also work)
  • salt and pepper for tasting

INSTRUCTIONS 

  1.  preheat oven to 375
  2. wash potatoes and pat dry
  3. slice each potato the center long way
  4. In a large bowl combine all the potato halves with the olive oil or any other kind of oil  you want to use and mix well to coat the potatoes well!
  5. layout the potato halves evenly on a oven pan/ dish and lightly sprinkle salt and pepper over them.
  6. bake potatoes for 1 hr to 1 hr 20 min.
  7. while potatoes are baking slice the bacon pieces into 1/2 in wide pieces and cook in a pan over low-medium  heat. Give it a mix  a few times until you have bacon crumbs( not too dry though). set aside to cool
  8. After 1 hour check by poking a few potato halves with a fork, if fork goes in easy and potato feels soft then they are ready, if not then bake until ready!
  9. once potato halves have cooled down a bit, scoop out the inside of each potato half. You want them to be hallowed out in the middle to create a “boat”
  10. In a large bowl add the scooped out insides of the potatoes, 3 Tbsps butter, 3-4 Tbsps sour cream( depends on the size of your potatoes), 1 1/4 cup of shredded cheese of your choice and  3/4 of the bacon .
  11. mix all together and TASTE to see how much salt/ pepper to add. Mix should be perfect to your taste!
  12. place the fillings back into the empty potato halves
  13.  If you are making this recipe ahead of time then after placing the mixture back into the potato halves set aside to cool. Once cooled cover with foil and refrigerate up to 2 days.
  14. once you want to serve the loaded potatoes preheat oven to 400 and bake for 12 minutes( if they were refrigerated bake for 20-25 minutes)
  15. let potatoes cool down a few minutes and top with about 1 tsp of sour cream on each potato boat ( add more or less sour cream by preference! )
  16. sprinkle the rest of the bacon, cheese and scallions evenly over all 10 potato boats!
