Baked Salmon

The simplest and most delicious Salmon recipe you will ever try! This can be served at lunch and dinner with the side of any form of potatoes, and veggies. I prefer mashed potatoes and asparagus😋. I also serve this salmon for guests and parties. I have a couple different ways I prepare my salmon. Mainly grilled or baked!  So go ahead and try out this super easy recipe and see what Secret ingredient I put in to make this wonderful unique tasty salmon  😊☺️😋🙌

This recipe serves 4 people and if served with a side of potatoes or other then, serves 6-7.

Ingredients:

  • Fresh or thawed Salmon
  • Lemon juice 1/2 tbsp
  • salt, pepper, favorite seasonings
  • green herbs
  • minced garlic or garlic powder
  • mayo 2 tablespoons- secret ingredient☺️
  • grated Parmesan cheese- optional
  • lemon slices- optional for garnish
  • Herbs- optional for garnish

 

Instructions:

  1. wash and pat dry salmon
  2. place salmon in a baking dish and season with salt, pepper, minced garlic or garlic powder, herbs or your other favorite seasonings.
  3. Add 2 tbsp of Mayo, 1/2 tbsp of lemon juice and spread evenly over the salmon.( don’t worry salmon won’t be too greasy!) 
  4. Let marinate for at least 4hrs to overnight for the best taste but could bake right away if needed and also tastes great!
  5. Once ready to bake preheat oven to 350.
  6. bake for 1hr-1hr 20 min. Depends on the thickness of the salmon.
  7. Once salmon is ready need to broil it for a couple minutes.
  8. Before broiling – optional to sprinkle lightly with cheese( I prefer Parmesan)
  9. Broil at 450 for 3-4 minutes.
  10. Salmon is ready to be served at this point!
  11. If you want to make it look more fancy, place salmon on a nice plate or just leave it in your baking dish if you like but omit some of the liquid from then pan! Then garnish with slices of lemons on the sides or top and sprinkle with herbs!

Enjoy with a side of Mashed potatoes and your favorite veggies! !😋☺️🙌😊

Olive Garden Zupa Toscana Soup

I think everyone loves Olive Garden Zupa Toscana, so why not make it at home for so much cheaper?! And if you haven’t tried this soup, you are missing out big time! Super EASY, CHEAP to make, and yet so DELICIOUS!

Serves 8-9 people

Ingredients:

  • 4 large potatoes
  • 1 lb Italian sausage hot or mild
  • 6 strips of bacon
  • 1 bunch of kale about 3-4 cups chopped
  • 1 large Onion
  • 5-6 minced garlic cloves
  • 2 cans of chicken broth (14.5ounce each)
  • 8 cups of water
  • 1 cup heavy cream
  • salt, pepper, red pepper flakes

Instructions:

  1. In a large pot mix all chicken broth and water and heat on medium heat.
  2. Chop up Union, mince the garlic and add to the pot.
  3. Wash and slice the potatoes to  about 1/4 inch thickness
  4. slice the bacon to mini pieces and on a skillet on low-Med heat cook until crumbs but not too dry.
  5. Cut up the sausage to small pieces and also cook until ready on a skillet on medium heat and using a spatula break the pieces into smaller pieces while cooking.
  6. Once water in pot starts boiling add the potatoes. And season slightly with salt and pepper.
  7. Meanwhile wash and chop the  kale.
  8. When potatoes will be almost ready add in the bacon and sausage. Let it all cook on medium heat for about 10 minutes or until potatoes will be completely ready.
  9. Taste the soup at this point to see how much more salt, pepper or pepper flakes( if you like spicy) is needed.
  10. Lower the heat to low and add the heavy cream. Mix well. Let it boil and add the kale.
  11. Let it simmer for 2-3 minutes and taste one more time to make sure no more salt, pepper heavy cream or any other seasonings you preffer are needed !
  12. Sprinkle your bowl of soup with some Parmesan cheese and enjoy with a side of breadsticks ! ( breadsticks could be bought in any grocery store! No need to spend hours making dough 🙄)
  13. Enjoy, and don’t eat too much 😋☺️😆😉

Shrimp and pork Dumplings

 

imageAfter such a busy week, I finally found the time to post another recipe, and let me tell you this. This dumpling recipe is incredible! You can use so many different fillings, basically anything you have at home. And the best part, it that you don’t need no dough for this recipe. Won ton wrappers are whats used in this recipe, and these could be found in any grocery store! My favorite fillings are shrimp and ground pork so that is what i’ll be using in this recipe, but feel free to replace with other.These can be steamed or easily fried! So EASY, FAST and DELICIOUS!!

Makes 20-22 won tons, Serves 2-3 people 

Ingredients: 

  • 20-22 won ton wrappers ( usually comes in package of 40)
  • 1/2 pound pork
  • 1 pound shrimp
  • 1 1/2 cup cabbage ( shredded)
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • vegetable oil ( if frying)
  • salt pepper for taste
  • More soy sauce and/ or teriyaki sauce for dipping

Instructions:

  1. Wash, drain shrimp and chop into small pieces
  2. Shred cabbage
  3. Combine cabbage together with the ground pork, shrimp soy sauce, Sesame oil, salt and pepper and mix well!
  4. Put one tbsp of the mixture onto a won ton wrap, dip your finger into water and rub the edges of the won ton, and fold the won ton into a triangle.
  5. Use a steamer to steam them and then dip into the sauces or
  6. Heat up large  skillet with 2-3 tablespoons of oil and place the won tons and fry  for 1 1/2-2 min per side. Place on a paper towel to drain some of the oil. Dumplings should be golden and crisp.

 Enjoy with soy sauce, teriyaki sauce or any other sauce you love! Feel free to use other fillings like, chicken, beef, or just shrimp or veggies! BE CREATIVE!
